Delicious guilt "free" chocolate chip cookies

  • These are My Dairy, Gluten, Corn & Soy free Chocolate Chip Cookies! They are so yummy & soft! Chris ate....at least 5 of them in a matter of a couple minutes LOL. He said they tasted better then my "normal" chocolate chip non safe cookies! They do not taste "free" of "the good stuff"  Very impressed

1) Beat the oil, sugars, vanilla and salt till fluffy.
2) Beat in the egg, be sure to scrape down the sides and bottom of the bowl midway through to make sure everything is well combined.
3) Whisk together the flour (I put the flour in the food possessor to make finer), xanthan gum, baking powder, and baking soda.
4) Beat the dry ingredients into the butter mixture, then blend in the chocolate chips and nuts. Again, scrape the bottom and sides of the bowl to be sure everything is well blended.
5) Preheat the oven to 350°F. Lightly grease stoneware baking sheet.
6) Scoop tablespoon-sized balls of dough onto the prepared baking sheets; a tablespoon cookie scoop works well here. Leave space between the cookies so they can spread. I scoop, roll my cookies then flatten.
7) Bake the cookies for 11 minutes, until golden brown. Remove from the oven and let rest on the baking sheets for 5 minutes, to set, before transferring to racks to cool completely. Or allow them to cool right on the baking sheets.

1 teaspoon vanilla extract
1 cup all-purpose flour or for Gluten Free: 1/2 cup rice flour, 4 tablespoons corn starch, 1/2 teaspoon xantham gum

1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup Enjoy Life Chocolate Chunks

DIRECTIONS:

1. Preheat oven to 350°F.
2. In large bowl, beat oil, sugar, eggs, and vanilla until light and fluffy. Combine the flour mixture, cocoa, baking soda, and salt; stir into the oil mixture until well blended. Mix in the chocolate chips. Drop by rounded teaspoonfuls onto greased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

NOTES:

- I measured these using my 1 tablespoon cookie scoop, rolled them into balls and slightly flattened them with my palm. Once they came out of the oven, I added a few extra chips to the tops of each cookie.

Original Recipe found here.  I changed it to be dairy & gluten free!

Homemade Chocolate Syrup

INGREDIENTS:

  • ½ cup cocoa powder
  • 1 cup water
  • 2 cups sugar
  • ⅛ teaspoon salt
  • ¼ teaspoon vanilla
DIRECTIONS:

Mix the cocoa powder and the water in a saucepan. Heat and stir to dissolve the cocoa. Add the sugar, and stir to dissolve. Boil for 3 minutes over medium heat. Be careful not to let it get too hot and boil over! Add the salt and the vanilla. Let cool. Pour into a clean glass jar, and store in the refrigerator. Keeps for several months, but trust me it will be gone before then. Yields two cups.
I halved the recipe when I made it.

Pastry for Pies & Tarts

One-Crust Pie (9in)
1 cup flour
1/2 tsp salt
1/3 plus 1 tbs shortening
2 to 3 tbs of cold water

(Double recipe for 2 pie crusts)

I mix the flour & salt together, then I add the shortening (mix with hands) then add the water.

3 Minute Brownies

I was encouraged to try this recipe because a friend Bethanie Howe shared this link on Facebook. I thought "No Way, Brownies in 3 minutes-Awesome AND it is in 'single' Portions--Double Awesome!" I don't get to make much sweets at my house becuase my husband doesn't like to eat them much, I don't want to make them and waste anything.

Bethanie makes A lot..Mostly All her recipes she has shared are Gluten Free (GF), Since I know a lot of people who eat Gluten Free & Dairy Free (DF) Recipes I decided to share the GF/DF recipe too!

4 tbs flour or GF flour
4 tbs sugar
2 tbs cocoa
1 egg or mixture of egg replacer
3 tbs milk or almond milk if dairy free
3 tbs of oil

Mix All ingredients in a mug.
Microwave on high for 3 minutes.
Enjoy!

How easy it that??

I added Chocolate chips to my recipe. I also added Mint Extract. You can add whatever you want to this brownie mix too! Whatever 'fits' or 'tickles' your fancy!

For Obadiah's First Birthday we did a Joint Party with his buddy Ezekiel, who was born about a week after Obadiah. Ezekiel's Mommy made a Special Yummy Cake for the two special birthday boys!

A few days after the birthday party, my husband hinted that he wanted me to make one. So, I did.

This Dirt Cake that I made I used Yellow Cake, you can also use Chocolate Cake, Next time I will use Chocolate Cake. Then you put chocolate pudding over the cake. Then you crunch up oreo cookies and pour them over to cover the cake with as little Or much as you would like. Then, I Add Gummy Worms. A very Simple, Easy, And Delious Cake!

I have a new snack that I Love. Oreos & Chocolate Pudding! You should Try it sometime!!
